Cranberry and Nutmeg Brioche





These are some brioche buns flavoured with nutmeg. I rolled them around some cranberry pieces and twisted them to form a bun.

The dough is rich and light with a perfect texture. It melts in the mouth. The buns rose perfectly and produced an appetising looking bun. According to one with a sweet tooth, they are a little sour, however I love the tartness that the cranberries bring and the contrast with the nutmeg. A little more sugar perhaps to sweeten them would make up for the sourness.
