Vanilla, Amaretto and Raisin Steamed Sponge Pudding



I have been making a steamed sponge pudding. It is a vanilla sponge with amaretto soaked raisins, served with a big dollop of custard.

The sponge itself is wonderfully light and has a heavenly texture, I steamed it in a bain marie in the oven which worked wonderfully and cooked it slowly and gently. The flavour of the amaretto is strong and boozy, perfectly complimenting the vanilla. This is absolutely delicious, warming and perfect for the end of winter. Definitely a recipe to keep.
