Blueberry and Cherry Crostata




This is pretty much a big jam tart. It is sweet shortcrust pastry made with semolina and ground vanilla filled with blueberry and cherry jam and topped with a pastry lattice decoration.

The addition of the semolina and vanilla to the pastry give it a unique flavour and a crunch that is far superior to any normal shortcrust. I found it hard to get the bottom to bake properly without overcooking the outside so next time I would definitely slide it onto a preheated tray to get it cooking faster. The jam is smooth, sweet and fruity with a strong flavour to accompany the pastry. It is rustic and delicious.
