Lamb Hotpot Pie and Potato Pastry



Two foods that are quintessentially Irish have to be potato and lamb. I have used mine to make a lamb hotpot flavoured with bay and thyme, topped with a potato pastry lid.

The lamb was cooked to perfection, falling apart and melting in your mouth. The flavours of the gravy enhanced the natural taste of the meat wonderfully. The potato pastry was crisp on top and slightly soft underneath, being moreish and delicious. This was an excellent St Patrick's Day dinner.
