Marmalade Gingerbread Cake
I have been making my take on another breakfast favourite. This is a gingerbread cake flavoured with orange zest and made with light muscovado sugar. It is flavoured with cinnamon, ginger and a pinch of cayenne pepper. It has a layer of marmalade inside and is brushed with more marmalade and sprinkled with crushed sugar cubes.
The cake is light, moist and has a lovely texture as it was a very wet mix. The amount of sugar in the cake is just right to contrast the slightly bitter marmalade. The crunch of the sugar cubes is fantastic and contrasts the soft sponge. I also very much like the spice from the cayenne, it adds a depth of flavour. This is a simple success.
