Lime Drizzle Madeira Cake



For once a nice traditional bake. This is a madeira sponge cake made with a combination of ground almonds and flour, flavoured with lime zest, drizzled with a lime syrup and topped with candied lime peel.

The cake itself is wonderfully light and moist from the addition of ground almonds. There is a perfect madeira style crack. The balance of lime is just right and the drizzle gives it the extra added zing. There is the desired granulated sugar crust on the top which is sweet and crunchy, and the lime peel would definitely pass the 'drop test'. I am very pleased indeed!
