Passionfruit Meringue Roulade



It's spring, it's Easter Sunday, and today's dessert is primed for the occasion. This is a meringue roulade filled with whipped cream and passionfruit, dusted with icing sugar.

The meringue itself is crisp and lightly browned on the outside with a soft and sweet interior. The filling contrasts fairly plain whipped cream with the very sweet passionfruit. The whole things goes together wonderfully. It is like a light bit of heaven. I am over the moon with its lack of cracking. I was expecting it to be a complete mess, but it rolled up like a dream. Other than the leaking passionfruit, all is perfect.
