Caerphilly Cheese Soufflé
A bit more of a St David's Day celebration. This is a cheese soufflé made using traditional welsh Caerphilly cheese.
This is my first savoury soufflé and, after realising that I was stupid to expect it to rise like its sweet counterpart, I watched the centre bubble up and dribble out the ramekin like a delicious volcano. It took a lot longer to bake than anticipated however eventually browned wonderfully and remained soft in the centre. The flavour of the Caerphilly is light and subtle but this makes for a wonderful tasting bake.
