Banoffee and Walnut Cake



This is my take on a classic coffee and walnut cake. It is a banana, walnut and coffee sponge layered with coffee crème au berre and topped with chopped walnuts.

The sponge itself is very moist due to the fruit with a hint of coffee that is just right. The cream is rich and buttery with, again, a lovely flavour. The walnuts are a perfect added crunch. It is delicious and definitely a recipe to keep.
