Kiwi and White Chocolate Cupcakes



I have never baked with kiwi before so I thought I ought to give it a try. These are some simple cupcakes made with golden caster sugar and chunks of white chocolate. They are topped with a kiwi swiss meringue buttercream and a kiwi slice. 

The cake itself is fantastic. The texture is just right and the flavour rich and sweet from the golden sugar and white chocolate pieces I did have to cut the tops slightly as they peaked when baking, but this was most likely due to the reasonably small tin diameter. The frosting has a delicious flavour, with the kiwi being just enough to cut through the butteriness. It is creamy and light. I am very thankful to the internet for the success of this bake. I now know how to fix curdled meringue buttercream (although I hope I don't have to do it too often!). In the end, after facing near disaster, all turned out wonderfully.
