Blackberry and Bay Leaf Posset



This is a creamy dessert of a blackberry and bay leaf posset topped with a vanilla pannacotta and blackberries, all finished with a bay leaf.

It was an interesting experiment that proved almost disastrous. I have now learnt that blackberries are acidic enough to curdle milk. After discovering this I adapted my approach and went for a cornflour thickened milk mixture and then a pannacotta to top it. The bay leaf flavour works well with the blackberry and the two parts marry together to make a delicious dessert. Perseverance paid off in the end.
