Cranberry Rolls



This is my take on a traditional fig roll. They are a pastry - biscuit hybrid dough filled with dried cranberries softened in rose water, orange zest and golden caster sugar. They are sprinkled with granulated sugar.

The pastry outside is crisp and short with a fairly plain flavour so takes the strong cranberry, orange and rose combination well. The sugar topping is welcomed to add just the right amount of sweetness and an extra crunch. They would be perfect with a nice warming cup of tea.
