Lamington Straws
I have been inspired by the traditional Australian lamington cake. I have made some rough puff pastry straws filled with a chocolate, dark muscovado sugar and coconut filling.
The filling is rich with chocolate, although a little more sugar could perhaps be used to cut through the cocoa intensity. The coconut flavour marries wonderfully. The pastry is light and crisp and complemented the filling perfectly. They are a delicious sweet take on a cheese straw. A little icing sugar on top, or more in the filling and they would be perfect.
