Broccoli and Feta Filo Pie
I have baked my take on a Greek Spanakopita. This is homemade filo pastry filled with chopped broccoli, onion and crumbled feta cheese, with a handful of pine nuts, and flavoured with garlic, lemon zest and nutmeg.
The pastry has wonderfully crisp layers with a slightly softer centre from the filling. The flavours were almost perfect. I think a little less heavy handed with the nutmeg could have been a good idea, but other than that it is great. The texture contrast of the pastry, cheese and pine nuts adds to it and makes it even more delicious. This pie made for a fantastic dinner, was worth the patience, and is a fantastic take on a traditional favourite.
