Pineapple and Cream Cheese Cake



I have been using some of my leftover pineapple to make a loaf cake. It is filled with chunks of pineapple and flavoured with a pink of cinnamon. It is topped with a cream cheese frosting and toasted coconut flakes.

The cake is very light and moist thanks to the fruit and the use of oil rather than butter. The frosting did not, once again, go without issue. I seem to be no expert at cream cheese frosting and it always immediately goes too runny. So on the second batch and after a few improvements to my recipe I managed to overcome my hurdle and make a successful topping. At least I now know how to make it work next time too! The cinnamon addition to the cake makes the flavour equally match the texture. It is a lovely afternoon tea treat.
