Lemon Glazed Pretzels
I have once again ventured into the world of pretzels. These are a lemon flavoured, slightly sweetened, dough brushed with a lemon glaze.
The dough itself was well risen so it is soft and fairly light. Poaching in bicarbonate of soda gave them a wonderful chewy crust characteristic of a pretzel. The lemon flavour is strong and intense, but not sour. The sweetness from the icing sugar in the glaze is just right to ensure this. They have the traditional double twist of a pretzel but seemed to have puffed up a little too much to leave themselves without the expected holes. Next time I will be persevering with rolling the lengths of dough out more to make them thinner. Other than their slight obesity, I am very happy with these. They are delicious.
