Vegetable Tagine Pie
A nice warming welcome home dinner for myself. I have made a mixed vegetable tagine spiced with cumin, cinnamon, turmeric, paprika and parsley, and topped with homemade filo pastry and black onion seeds.
The pastry was crisp, flaky and light with a rich butteriness from the brushing of the layers. The tagine was perfectly spiced and delicious, with a lovely light tomato base and excellent miture of vegetables. This was a perfect meal.
