Red Pepper and Mozzarella Pancake Stack

Since it is pancake day it is only fitting that pancakes are made. This is my savoury version. It is a pancake stack made of basil flavoured pancake batter filled with red pepper and mozzarella cheese, all topped with more mozzarella.

The pancakes are soft and well flavoured, just how they should be. The pepper is sweet and contrasts the fairly plan batter perfectly. It is very cheesey and delicious!
