Gooseberry Crumble Pies
These are some sweet hot water pastry pies filled with gooseberries in light brown sugar and sprinkled with a crumble topping.
The pastry is just sweet enough and a great hot water crust. It was tricky to shape the pastry and get it to stay together. I was expecting the pastry to melt to a crumbled lump when in the oven but it didn't. It stayed together and baked well. The filling is fruity and the topping is crisp. It is comforting and delicious.
