Carrot and Cardamom Cookies





I have been baking my take on a carrot cake. They are cookies made with light brown sugar filled with raisins and grated carrot, and are flavoured with cardamom, orange blossom and honey.

The word cookie should be used loosely as they are perhaps a little more cake like than intended. I think this is a combination of not quite enough flour and too much honey making it difficult for them to crisp up. They do, however, taste great, although a little more cardamom and orange blossom could be tolerated, as well as a few more raisins and maybe even more carrot (careful, they are almost becoming healthy!). But, as cookie-cake hybrids go, they aren't too bad!
