Spiced Fig and Orange Tea Cakes
These are my version of a traditional tea cake. They are flavoured with orange zest and juice, mixed spice and filled with dried figs and raisins. They are glazed with orange marmalade.
The dough is soft although I think slightly underproofed due to impatience and only room temperature within which to leave it. The bases of the tea cakes have peculiarly over baked (I think I need to keep experimenting with the heat conduction in my oven on that one). The flavour is however delicious with the right level of spice and a wonderful orange taste. A few slight errors but they really aren't too bad.
