I've transported myself to somewhere much hotter to wish away the winter, baking with tropical fruit. This is a dessert featuring a sable biscuit base, mango delice and mango and lime jelly layer topped with mango pieces, lime slices and mint leaves.
The biscuit base is baked to perfection, being crisp and crunchy, with a delicious melt in the mouth buttery flavour. The set of the delice and jelly is just right so it is creamy yet holds its shape. The mango and lime flavour work together well, although it would have been good if the mango was a little riper and so had a bit more flavour. Other than that I think it speaks for itself. It looks and tastes great!
