Leek and Bacon Eccles Cakes




Next week it is St David's Day, so I have made a savoury Eccles cake. These are flaky pastry filled with a mixture of leek, smoked bacon and cream cheese flavoured with fresh parsley.

The pastry is very crisp and light. It bakes to just golden and tastes fantastic. The smoked bacon and leek combination is excellent, with just the right hint of creaminess from the cream cheese. They were difficult to fill and seal as I think I once again got carried away with how much I wanted to put inside. Perseverance paid off as there was no leakage! These are a delicious Welsh take on an English favourite.
