Caraway Seed Madeleines
My first February bake is my take on a traditional seed cake. These are some french madeleines flavoured with caraway seeds, nutmeg, cloves and mace.
The cake itself is the perfect consistency, light and delicate with a delicious buttery flavour. The spices are strong and could perhaps do with a pinch less nutmeg (I got a bit carried away and thought I could double the amounts in my recipe but in hind sight maybe not). Other than that they taste great and are a fantastic way to start a new month.
