Cherry and Pine Nut Cake
Today's cake was a
fairly simple one. It is a dried cherry and pine nut sponge.
The flavours of pine
nuts and cherries work well together, although more cherries could have been
added. Either this, or the addition of fresh cherries would also have worked
well. The cake is very moist due to the use of sunflower oil rather than butter and therefore has a lovely texture.
It did bake oddly, setting on the outside easily but forming a colossal peak in
the centre. This was due to a combination of the baking tin size being small
and mix being very much like a batter. After a bit of reshaping I managed to
make it into something that looks as good as it tastes.
