Strawberry Frangipane Tarts





I have been baking some tarts for my Grandma as a farewell gift. These are some shortcrust pastry cases topped with strawberry jam and filled with an almond frangipane and a fanned strawberry. The top is coated with a strawberry jam glaze and crushed toasted flaked almonds.

The pastry baked very well so it had a crisp base and no soggy bottom. The frangipane became beautifully caramelised and the almond flavour is strong and delicious. They turned out better than I though!
