Lemon, Strawberry and Basil Queen of Puddings




I have been using up some of my last summer strawberries to make a queen of puddings. It features a lemony breadcrumb thickened custard base topped with a fruity strawberry jam and basil meringue.

The flavours of the pudding are wonderful, with the basil coming through and complimenting the lemon and strawberry perfectly. The only downside to the dessert was the lack of set from the custard base. Either it wasn't bakes for long enough or the lemon juice weakened the mixture too much leading to a runny mess of custard. If served as individual portions it wouldn't have mattered however serving from a larger dish proved messy! Next time I would use double lemon zest and no juice and hope for the best!
