Pimms Gateau

This is my take on a glass of summery Pimms. It is a gateau made of a lemon and orange zest whisked sponge, lemon, orange and pimms syrup, pimms cream and topped with orange pieces, strawberries and mint leaves.

The cake is light and has a subtle fruity flavour. The syrup gives it a lovely texture and adds a delicious fruity flavour. The alcoholic cream goes perfectly. This is a great summery bake!
