Chai Spiced Sultana Kouign Amann





I have been wanting to make some kouign amann for ages. This is my take which contain sugar flavoured with a chai spice mix as well as sultanas in the layers.

The pastry puffed fantastically and created a well risen, light and buttery pastry. They browned a little more than intended in the oven and the sultanas darkened a bit too much as I didn't soak them first. It could take a little more spice too. A few tweaks and they would be perfection.
