Peach Crepes Suzette




I had some peaches to use up and an unopened bottle of peach schnapps so decided to make my take on a classic dessert (without the fire!). I made some tradition crepes spread with sweetened peach butter which caramelised on them. I folded this inside, added a little of the alcohol then topped with caramelised peach slices flavoured with more schnapps.

The pancake was plain but perfect with the peaches, caramel sauce and alcohol. The peach butter caramelised wonderfully and it was sweet, not sickly, and slightly boozy. Perfect!
