Caramel and Pistachio Fondants
I attempted a self-saucing pudding. This is a vanilla caramel sponge with chopped pistachios and a runny caramel centre with pistachio paste.
The cake is light and just baked so that it is slightly gooey. The caramel centre oozed perfectly and was sweet and delicious. The pistachio was lost slightly in the sweet flavour and so my improvement would be even more pistachios in the sponge and to incorporate the paste into the caramel. Other than that, a great dessert!
