Apricot, Rosemary and Pine Nut Kugelhopf
I made a yeasted cake this week. It is a kugelhopf made with rosemary infused milk and orange zest, with pine nuts, fresh apricot pieces and orange soaked raisins. It is dusted with icing sugar and decorated with chopped pine nuts and rosemary.
The cake itself is a slightly battery texture although light and delicious. It overbaked slightly as I should have turned the oven down a little. Other than that, the rosemary was subtle but could be tasted and the apricot sweet and fresh. This is perhaps what made it a little wet.
