Passionfruit Meringue Pies
This is the final bake for work. They are some shortcrust pastry tarts filled with passionfruit and lemon curd and topped with white chocolate meringues.
The pastry is short and crisp. The curd filling is sweet and fruity and the crisp meringue on top adds a fabulous texture. I am delighted with these delicate bakes.
