Blueberry, Blackberry and Lavender Macaron Tartlets





I have used my macarons to make some individual shortcrust pastry tartlets. They are filled with a lavender creme patisserie and topped with fresh blueberries and blackberries and the blueberry and blackberry jam macarons.

The pastry is short and crisp. The cases weren't perfect in design due to the size of tin I used. I would cut bigger circles in future so it could be thinner. The filling has a wonderful balance of lavender and this perfectly compliments the fruit. The improvement to make would be thinner pastry so a better crust-filling balance.
