Orange Blossom and Summer Berry Madeleines





I have used some of the summer berry jam that filled my viennese biscuits to make some delicate madeleines. They are flavoured lightly with orange blossom water and have piped jam in the centre. They are decorated simply with icing sugar.

The orange blossom flavour is very subtle, perhaps a little too subtle, however, the crumb and taste of the madeleines is great. The jam adds a great addition to an otherwise lovely, but slightly plain, cake.
