Yorkshire Curd Tart Cheesecake



This is my version of a northern favourite, the curd tart. I have made a base and sides with homemade gingernuts and filled it with a lemon and nutmeg flavoured baked ricotta cheesecake with currants.

The flavour of the cheesecake is delicious. The biscuit base and sides had a little too much butter so didn't seem to harden enough, however the taste of the gingernuts was a good addition to the cheesecake. The sides also became a little fat as the cheesecake rose and pushed them upwards as I didn't fill it enough. Despite this, I am very happy. It is safe to say that if I had a bigger flan tin the proportions would have made it look much better indeed.
