Chocolate Amaretto Pancake Cake

This is a cake made of what ended up being 21 pancakes. They are individually cooked traditional crepes coated in an amaretto and chocolate ganache and topped with almond brittle.

The flavour of the chocolate is rich and delicious and the britlle crunchy. The pancakes create beautiful layers and have a soft texture. This is a bake perfect for pancake day with all the naughty things in one bake.
