Ginger Syrup Steamed Sponge Pudding

This is a ginger spiced steamed sponge pudding with a gingery syrup topping and chopped stem ginger. 

The flavour is perfect, with just the right amount of ginger and golden syrup. It is sweet but, combined with the spice and the lightly spiced sponge, it is spot on. The sponge itself is light although I am wondering if it is perhaps a little over-steamed as the base always seems a different texture to the rest. I think next time I will try it steamed a little less and see what happens. It was, however, delicious.
