Red Onion and Oregano Focaccia

This is traditional Italian focaccia topped with roasted red onion and oregano infused olive oil.

The wet dough was tricky to work with but the mess was definitely worthwhile as the result is full of uneven air holes and is light and soft. The flavours take you on a trip to the Mediterranean. It is delicious.
