Madeleines
These are some madeleines made with brown butter and golden caster sugar. I have left some the traditional French way, and the others are brushed with raspberry jam and sprinkled with dessicated coconut in the traditional English manner.
The sponge itself is rich, soft and full of deep flavour with the butter and sugar combination. They are both beautifully shaped and delicious, the French and English ways.
