Vanilla, Apricot and Ginger Condensed Milk Pannacotta




This is a pannacotta flavoured with vanilla and made with condensed milk. It is served with a coulis of apricot jam and chopped stem ginger.

The flavour of the pannacotta was sweet and delicious, and the vanilla came through well. The texture was a bit firmer than intended; I have clearly solved the gelatine problem! Next time, less gelatine. I liked the taste of the condensed milk coming through. The addition of the apricot and ginger was fiery but perfectly complimented the sweet dessert. I am very happy it turned out of the mould too, as it looked like it wouldn't at one point!
