Honey and Pomegranate Cakes





These are some individual fatless sponge cakes made with some ground pistachios and topped with pomegranate seeds and a pomegranate juice and honey drizzle.

The cake itself is beautifully light and risen with a glorious golden brown top. The flavour is delicious due to the use of golden caster sugar, which really comes through. The addition of ground toasted pistachios are a subtle but worthwhile addition. The pomegranate seeds on top not only look like jewels but add a much needed crunch. The flavour of them, and the honey, are lovely, although the honey could perhaps be slightly more potent in the rest of the sponge as when you get a hint it is fabulous.
