Caerphilly Cheese Pastry Chicken and Leek Pie




This is my St David's Day pie. It is chicken and leek in a white sauce flavoured with thyme and parsley, and topped with a Caerphilly cheese shortcrust pastry.

The pastry was delicious with the addition of the slightly tangy cheese, and the decoration was beautiful. The flavour of the filling was great and the leeks complimented the herbs and cheese well.
