Mango, Kiwi and Coconut Meringue Roulade
This is a meringue roulade filled with whipped cream, mango, kiwi and decorated with dessicated coconut flakes.
This was an interesting bake as, by doing it in a slight rush, I seem to have missed an egg white and therefore had a little too much sugar. This mistake turned out to be not so bad as it rolled perfectly and the sweetness of the meringue was perfect with the less sweet tropical fruit. The meringue was crisp on the outside and soft on the inside. The flavours of the fruit are delicious. I am very happy with the end result!
