Boozy Orange Salambos





These are some crepe suzette inspired choux puffs to celebrate the start of lent. They are similar to salambos and are choux pastry filled with orange cointreau cream and topped with either caramel or icing sugar, with pieces of orange zest.

The choux pastry was crisp and dry. The flavoured cream turned out very boozy but it is a delicious kick. The caramel perfectly compliments the alcohol with the sweetness. I am very pleased with the look and taste of these. A great day for patisserie.
