Black Bun Cake
This is my version of a traditional black bun. I have made it, not into a fruit cake baked in hot water crust pasty, but a spiced cake brushed with orange juice and golden syrup, and topped with raisins, sultanas, glacé cherries and toasted flaked almonds.
I was worried that today's bake would be a little boring, but a broken oven element saw to that perception. This is a cake that started being baked in the convection setting of the microwave and transferred to the top oven once I realised the top was baking but the bottom was still raw. I am very glad I persevered with the oven on this as the flavour is delicious, and it turned out looking exactly as I wanted. Despite a slightly crisp bottom, it was excellent!
