Cullen Skink Quiche
This is my a bake to celebrate the delights of Scottish food, particularly the cullen skink, in the week of Burn's night. It is a shortcrust pastry case filled with smoked fish, leek, parsley and a quiche filling.
The pastry is thin, short and crisp and the filling has a deliciously delicate flavour. This is a very tasty quiche, a lovely dinner.
