Apple and Rosemary Hot Water Crust Pies
These are some rustic pies made from a sweet hot water crust pastry and filled with apple flavoured with cinnamon, brown sugar and rosemary.
The pastry is crisp and delicious with a wintry filling. The hint of rosemary adds something special to them. They are a lovely warming January bake. I have learnt the importance of both sealing the pies and making sure there are air holes as the apple did get a little carried away! Strangely, the first one I did was the best.
