Cherry Lemon Battenberg






This is a 9-square battenberg made up of a yellow lemon sponge and a cherry filled pink sponge. It is sandwiched together with apricot jam and rolled in homemade almond marzipan,

The cake is soft and light with a delicate flavour. The marzipan is almondy and delicious. I am very pleased with how it turned out, especially based on the challenges of rolling out sticky homemade marzipan, lining a tin which was too big, and cutting the cake into even squares. Last time's attempt of a battenberg ended with marzipan falling off it and a collapsed mess, so this is most definitely an improvement.
