Cranachan Mousses
This is my version of a traditional Scottish dessert, Cranachan. They are honey and lemon mousses with a raspberry and whisky jelly centre, raspberry jelly topping, digestive biscuit base and crumb and raspberries.
I am very happy as the mousses and jelly set very well. The biscuit was crisp and short providing a delicious crunch to the otherwise creamy mousse. A little more honey and more raspberry flavour could have been tolerated, so another time I will be much bolder with the flavouring. Although I am sure that using proper honey (rather than value!) and fresh raspberries would have contributed to the taste. The taste is nonetheless delicious.
